3 tbsp salsa verde   
2 tbsp chopped cilantro Plus more for garnish 
2 cups of kale or salad greens preferably no spinach 
1/2 cup of canned red kidney beans rinsed
1/4 Avocado 
Thinly sliced red onion 
1 large egg 
1 tbsp of extra virgin olive oil 
Salt & pepper 
Serves 3 cups salad + 1 egg + 5 tablespoons of vinaigrette if desired
